How can I set my z axis to move the right amount . I select a 10mm movement in the lcd and it moves only 2.7 mm. Whats the reason for such difference? my cuts are all coming too shallow
What kind of leadscrew do you have for the z-axis and what value do you have for the z steps/mm? If you’re tuning your machine for the first time, the simplest, trial and error way to fix it would be to adjust the z steps/mm in the EEPROM by increasing the value by a factor of about 3.7 (10 divided by 2.7).

how can i see the current value of my steps per mm
Using the terminal (e.g., repetier-host, octoprint, pronterface) connected to the control board, enter M115 and you should see a whole list of settings. Look for Steps per unit.
